Summer is a great time to make quick and easy meals using fresh ingredients. I love to have a few recipes on hand that I can throw together either in a pinch, for unexpected company, or after a long day of fun and frolic, when all of my energy has been spent having fun and flocking. Summertime seems to lend itself to those kinds of days and these kinds of meals.
Here is an incredibly easy pasta dish that it so very yummy. I almost feel badly serving it to guests because it is so easy..almost. I like it because in the summer I usually have tomatoes and fresh basil on hand and it literally is ready in about 15 minutes. I usually don’t measure it, but here is a general guideline:
FRESH BASIL AND TOMATO PASTA
Freshly grated Parmesan cheese
Freshly ground black pepper
Fresh basil leaves for garnish
Cook pasta in 4 quarts boiling water until very al dente. As pasta is boiling: mix olive oil, basil, tomatoes, garlic, and salt and pepper. Drain pasta and toss with olive oil mixture to coat pasta thoroughly. Before serving, add Parmesan cheese and garnish with basil leaves. That’s it! It is so easy and very good.
Since I have fresh basil and tomatoes on my mind, here is another recipe that is very quick and easy, yet delicious.
1 handful of fresh basil leaves
2 plum tomatoes
A drizzle of olive oil
Salt, pepper, parsley, to taste
Crushed red pepper flakes (optional, but adds very nice taste)
Slice mozzarella and tomatoes. Place mozzarella, tomato, and basil leaf on a dish. Continue the pattern until the dish is full. Drizzle with olive oil. Season with salt, pepper, parsley, and red pepper flakes. It looks pretty and can be used as an appetizer, side dish, or a light main dish.
